Guinness & Beef Stew

This recipe was passed onto me by a dear friend. She found it in ‘The Gourmet Slow Cooker” recipe book. Two words to describe this dish: Easy and Delicious!

Ingredients:

3/4 cup flour
2 1/2 lbs lean stewing beef cut into cubes
2 tbsp vegetable oil
2 – 3 large peeled potatoes cute into bit sized cubes
3 carrots peeled and cut into smaller pieces
2 large quartered yellow onion
1 – 2 sprig of thyme
2 cups Guinness stout (about 1 can and change from a 2nd)
1 tsp salt
chopped fresh parsley for garnish

Directions:

Place the flour and beef in a resealable plastic bag and shake to coat the beef completely. In a saute pan over medium heat add the oil and the beef (I did it in batches) and cooked it until it was browned on all sides. Once it is browned add it to your slow cooker with the veggies and pour the beer over top. It will not look like enough liquid but during cooking it will be more than enough! Cover and cook on low for 8 hours until the meat is very tender. Season with salt, discard the extra sprigs of thyme and garnish with the parsley when you serve.

It really couldn’t get any more simple than that folks! It is a great stew and we really enjoy it – perfect on colder, snowy days! Enjoy!
